Today started out a very rainy, stormy day
but quickly cleared up, until now (7:30pm) when the stormy weather is picking up again.
Recently, Ryan and I have gotten some love from our parents, while feeling a little homesick I got this
Just what I needed to feel better 🙂
And just last night we got this in the mail from Ryan’s dad and Dina
And then this evening our engagement presents from Ryan’s mom and Joseph came in
Don’t worry mom, we’re getting a ton of beautiful, dark, purple ribbon and I’m saving it all for you!
On top of all our family love I made bread this evening. It was supposed to be a pizza but Ryan and I changed dinner plans last minute. We were originally going to make hot dog pizza for dinner but upon realizing that neither of us actually wanted to eat that we switched meal plans. Instead we went for rice noodles with a spicy peanut butter sauce and a mix of shrimp and scallop. The sauce I found a recipe for online and was actually really great! We mixed:
3 tablespoons peanut butter
2 tablespoons chilli paste
1 tablespoon soya sauce
2 crushed cloves of garlic
small amount of minced onion
super small amount of minced red pepper
It’s worth trying out 🙂
Unfortunately I forgot to take a picture of our dinner 😦
We did this while the bread was cooking, by the time we finished dinner we had this
While the shape may look a little funny the taste was not. It turned out so well and I have my mom to thank for that! It’s her wonderful recipe that got us this bread (it’s great alone but even better as pizza!)
Dissolve 2 teaspoons sugar in 1 1/2 cups hot water then sprinkle 1 teaspoon yeast and let rise for ten minutes.
Whisk together 2 tablespoons oil and 1 teaspoon salt and then whisk in with the yeast.
Slowly incorporate 1 1/2 cups of flour while whisking.
At this point you will need to use a wooden spoon as the dough will be thick, incorporate a half cup flour.
Finally pour the dough onto a counter and knead in another 1/2 cup of flour.
After kneading the dough place in a large bowl and cover with a towel, let sit for an hour, after an hour the dough will have risen, punch the dough down and let rise again.
Grease a pan and bake at 350 until golden brown and cooked through.
