Vegetarian Night

Tonight Ryan and I made a vegetarian lasagna that is truly worth sharing with you all! 


2 carrots 
1 zucchini 
1 onion 
4 cloves garlic 
1 pack mushrooms
1 cup cauliflower 
1 red pepper 
1 cup parsley 
salt and pepper
2 eggs
30 oz ricotta
1 large pack mozzarella cheese 
1/2 cup parmesan 

1 pack lasagna noodles 
Tomato sauce (or two cans tomato) 

We started out by cutting up all our veggies and sauteing them in a large pot with some olive oil 


While they were cooking with mixed the ricotta, parmesan and eggs together 



And boiled the noodles 



We layered everything, sauce, noodle, ricotta, cheese, sauce etc



Cooked for about 50 minutes at 350



And tried not to eat the whole thing in one sitting!
